Our products have the highest production rate in the world. Although we manufacture cooking, molding, and brining systems rated for 4,000, 8,000 and 12,000 pounds (1814, 3628, and 5443 kg) per hour, many customers operate well above these stated capacities.

COOKER/STRETCHER Cooker/Stretcher
Introduced in 1964, the continually refined Johnson Industries Cooker Stretcher represents a time-tested design that has provided cheese makers with the control and reliability they require to produce the finest pasta filata style cheese possible. All cookers are sized for customer production requirements.
RMC Rotary Molder Chiller (RMC)
The RMC is capable of forming and cooling Mozzarella Pizza Cheese into standard sizes as well as custom sizes based on your unique needs. Utilizing quickly interchangeable molds, one machine can satisfy all of your requirements. Incorporating patented proven sanitary forming technology, the RMC will provide a dimensionally true surface ensuring excellent block shape.
BRININGBrining
Our systems offer the most efficient cooling and uniform salt uptake methods available. Efficient brining remains a crucial factor in quality cheese production. To that end we developed our above ground and in-ground Cage Brine Systems to meet the challenge of providing a more efficient means of brining with pre-fabricated technology and cost saving features.
MKT Swiss Cheese MKT Swiss Cheese
Johnson Industries is the exclusive US agent for MKT Steel OY in Jäärvenpää, Finland.  MKT designs and manufactures the world’s finest Swiss and Emmanthal processing systems.  MKT systems are in use in many parts of the world for the manufacture of Gouda, Baby Swiss, Blue Veined Cheeses, and more. Johnson Industries co-manufactures a number of the components of the MKT systems in addition to performing project management, service, and commissioning functions.

Dry Salting Dry Salting Systems
The Dry Salter is located between the cooker stretcher and the molding machine. The pasta filata travels through the salting unit on a variable speed conveyor. The unit can be set and adjusted to provide the percentage of ingredient needed by the cheese maker. The cheese travels directly into the molder hopper where the molder augers complete the homogenous distribution of ingredient by gently working the cheese as it advances toward the forming process.
