Dry Salting Systems
The Dry Salter is located between the cooker/stretcher and the molding machine. The pasta filata travels through the salting unit on a variable speed conveyor. The unit can be set and adjusted to provide the percentage of ingredient needed by the cheese maker. The cheese travels directly into the molder hopper where the molder augers complete the homogenous distribution of ingredient by gently working the cheese as it advances toward the forms.
