We have extensive experience in brining Mozzarella, Provolone, Swiss, Gouda, Edam, Muenster, Blue, Feta, Havarti, Parmesan, Romano, String, Oaxaca, and others with sizes ranging from 1 oz (28 grams) String to 1,000 lb (453 kg) Swiss blocks.

Static Tank Systems
With its superior cooling, reduced brine time, and maximum use of floor space, the static brine system consists of a series of brine cages with shelves into which cheese blocks are floated. As each shelf is filled, the cage is lowered deeper into the brine tank until its fully submerged. Brine constantly flows through the system to give cold fresh brine to all surfaces of the cheese.
Dynamic Channel Systems
The dynamic systems consist of a brine channel that typically serpentines back and forth. A flow of brine constantly moves the cheese along the length of the channel, toward the discharge conveyor. These systems are excellent for lower capacity or shorter brine time cheeses.
Gantry Crane Systems
Our Gantry Crane System uses an overhead crane spanning the width and length of the brine system to raise and lower brine cages and transport them to loading, unloading, and washing stations. Cranes are controlled with a traditional pendant or Bluetooth controller carried by the operator. The gantry allows for a wide variety of brine system shapes, configurations, and varied brine times within the same system.
Intelligent Brining Systems
The Intelligent System is a fully automated variant of the Gantry system utilizing PLC controls for all aspect of system operation – including automatic loading, placement, time monitoring, unloading, and cage washing operations. It allows a full range of configurations with fully programmable X, Y, and Z axis movement resulting in significant labor savings. The Intelligent Brine is the state of the art in brining.
