The Manual Shuttle Head Molder is capable of forming and cooling 5 lb, 6 lb, 12 lb to 20 lb loaves of traditional American style mozzarella/pizza cheese at its ideal rated capacity of 4,000 (up to 6,000) lbs. per hour. The shuttle head molder system has uniform cooling that is important for giving the cheese blocks a smooth crevice free surface.
