The patented Johnson Industries Exact Weight String Cheese Machine (EWS) is a precision system consisting of a cooker, extruding machine, and forming head. The forming head is machined to a tolerance of .003” (.0762mm) that produces dimensionally precise string cheese with less than .03oz (1g) deviation per 1 oz (28g) piece resulting in a tremendous yield savings over traditional methods of string cheese production. The Exact Weight String Cheese Machine also employs the use of a high performance .08mm resolution error-proofing vision system controlled by AB ContolLogix.

The Johnson Industries Supreme™ String Cheese production line is a continuous system consisting of a cooker, extruding machine, and a cutting machine. The properly sized cooker produces superior uniformly cooked and stretched pasta filata (mozzarella, Oaxaca) using an optimized auger conveyance system. This cooker continuously feeds the dedicated extruder that pumps the pasta filata into individual channels that are sized per your specification. The extruded product is then cut to the specified length by individual knives that are precisely controlled by discrete photoelectric sensors.
Designed for maximum flexibility and ease of use, our Supreme™ String Cheese line can also be ordered to produce twisted, two-color varieties of string cheese. A single line is designed to produce 3000 lbs (1400 kg)/hr.
