The Johnson Industries Mozzarella cooker/stretcher is a ruggedly built, high quality machine for making pasta filata type Italian cheeses. The current models incorporate all of the technological advancements and refinements gained in over 40 years of Mozzarella production. The basic principles of the first machine have been retained, however. These include the longest residence time available in a cooker/stretcher, exclusive single auger design, low auger RPMs, gentle heating with a lower differential between water and curd temperatures, and time tested reliability. The fact that the first machine ever built using the original Nelles design is still in daily operation is testimony to these principles. |

The JN-CS models of cooker/stretchers are key components in our mozzarella / pizza cheese production system. This is the best method of maximizing fat, protein and moisture retention in each phase of production. Most manufacturers utilizing our systems are actually gaining moisture in the cooker/stretcher process. The smoother temperature increase and longer dwell time in our machine allow these moisture gains. The single auger/baffle arrangement protects the cheese mass, thus preventing fat losses. |
