With the Deep Tank design the customer constructs an in-ground concrete “well” into which a stainless steel pre-fabricated brine system is installed. This method provides the best of both worlds in brining; the space savings of an in ground design with the maintenance and worry free characteristics of a stainless steel lining. The stainless design also eliminates the concrete cure time needed with earlier epoxy coated brine pit systems. Rising labor costs and reduced margins call for new process and equipment innovations that are simple to install with economy of space, yet reliable and efficient in operation. that end we developed our Stainless Tank and Deep Tank Cage Brine Systems to meet the challenge of providing a more efficient means of brining with pre-fabricated technology and cost saving production qualities. The result is an integral part of our mozzarella / pizza cheese manufacturing system for greater fat, protein and moisture retention that has proven to affect yield gains of over 2% over competitive methods. Options to our brining systems include brine makers, single filing lanes, and an automatic brine strainer to increase filter life. |
