Dry Salting Systems

The Johnson Industries Dry Salter is located between the cooker stretcher and the molding machine. Pasta filata travels through the salting unit on a variable speed conveyor, traveling directly into the molder hopper. Once in the hopper, the molder augers complete the homogenous distribution of ingredient, gently working the cheese as it advances toward the forming process. The unit can be set and adjusted to provide the ingredient percentages based on product weight as determined by the cheese maker.
